Tuna Salad with Lemon & Olive Oil

12 oz light tuna in water
zest and juice of 1 lemon
3 scallions - minced
1 tbs capers (rinsed, drained, chopped)
1/2 c parsley, chopped
4 tbs extra virgin olive oil
salt and pepper to taste

Mix ingredients well in large bowl.

Spread on bread for a great sandwich (add spinach to make an even better sandwich!) or roll it up in a wrap.

It made about 4 sandwiches.
